杞子 10g Goji

桂花 3g Osmanthus Flower
熱水 100g Hot Water

水 200g Water
糖 130g Sugar

魚膠粉 20g Gelatine
水 60g Water
凍水 140g Cold Water

1.杞子加入熱水泡軟約半小時備用
2.桂花放到砧板上隔去多餘物質
3.100g熱水浸泡桂花約5-10分鐘備用
4.砂糖加入200g水煮沸，加入已泡浸的杞子慢火煮5-10分鐘
5.魚膠粉加入60g水拌勻後加至糖水煮溶
6.利用隔篩隔開桂花，只加入桂花水至魚膠溶液
7.依個人喜好加入適量桂花至魚膠溶液
8.加入160g冰水拌勻魚膠溶液
9.如想加速凝固時間，可用冰粒座至溶液開始濃稠
10.倒入容器中，冷藏至凝固，脫模切件即成
