糯米 150g Glutinous Rice
冬菇蝦米水 120g Dried Shrimp and Mushroom Water
臘腸 1/2條 Chinese Sausage
紅蔥頭 1/2個 Shallot
冬菇 2 Dried Mushroom
蝦米 6g Dried Shrimp
紹興酒 1tsp ShaoHsing Wine
生抽 1tsp Soy Sauce
老抽 1/2tsp Dark Soy Sauce
蠔油 1tsp Oyster Sauce
砂糖 1/2tsp Sugar
雞翼 10 Chicken Wings
鹽 1/2tsp Salt
砂糖 1/2tsp Sugar
胡椒粉 少許 Ground White Pepper
水 25g Water
麥芽糖 25g Maltose
白醋 80g White Vinegar
紹興酒 1tbsp ShaoHsing Wine
1.冬菇及蝦米用水浸泡兩小時至軟身,留起冬菇蝦米水,冬菇蝦米切小粒
2.將糯米洗淨,連同冬菇、蝦米及浸泡的水倒入飯煲,臘腸放在糯米上,煲至熟透(約40分鐘)
3.取出臘腸後切成小粒備用
4.爆香紅蔥頭碎及臘腸碎後加入紹興酒
5.倒入糯米飯及預先混合的生抽、老抽和蠔油,另加入砂糖,炒勻後盛起備用
6.先用剪刀剪下雞全翼雞鎚部分,用剪刀將雞翼尾部的關節位剪斷,剪刀伸入,將骨頭與肉修剪分離,將肉輕輕往下推,最後將雞翼與翼尖之間的關節剪斷,便可將骨頭取出
7.去骨雞翼加入砂糖,鹽及胡椒粉醃約 15分鐘
8.將糯米飯釀入雞翼後用牙籤封口
9.混合水、麥芽糖、白醋、紹興酒,浸泡雞翼後放入雪櫃風乾一個晚上
10.中火炸至黃金色,取出牙籤即成。
