4 tazas de harina
4 huevos
1 cucharadita de sal
3 barras de mantequilla de 90 gramos cada una
3/4 de taza de leche
1/2 aza de azúcar
2 cucharaditas de te de azar
11 gramos de levadura
1 cucharadita de ralladura de naranja.
poner en un recipiente la levadura 2 cucharadas de azúcar, 2 de harina un chorrito de leche y las cucharaditas de te de azar y revolvemos dejamos reposar por una hora.
pasada la hora ponemos todos los ingredientes restantes en una batidora con gancho y amasamos perfectamente agregamos la maza madre que teniamos reservada y incorporamos perfectamente amasamos a mano dando unos golpes y dejamos reposar la masa por espacio minimo de 2 horas en un lugar caliente.
una vez ya pasadas las dos horas de reposo extendemos ponemos mantequilla y el relleno deceado envolvemos como un rollo y formamos la rosca
para el relleno
1 barra de 190 gramos de queso philadelphia
8 cucharadas de dulce de leche o cajeta
batimos estos dos ingredientes perfectamente y listo nuestro relleno
PARA EL GLACE
3 tazas de azucar glass
2 claras de huevo
2 cucharaditas de jugo de limon
colorante en gel
batir las claras a velocidad media hasta que hagan espuma y le vamos incorporando el jugo de el limon una vez incorporado agregamos el azúcar glass cucharada a cucharada seguidas sin dejar de batir batir hasta que se forme un betun.
Se hornea a 180 grados hasta que dore =) de la parte de arriva por espacio maximo de 40 minutos
