Aloo puri / potato puri is a very popular puri recipe which tastes delicious even without any side dish or curry. While making this potato stuffed puri or alu puri , we have to keep in mind few things. The most important part to be noted is that , while kneading the dough for aloo puri, knead them stiff (do not make soft dough). Because once we keep the dough aside for few minutes the potato will release its moisture that makes the dough more soft. Roling the puris evenly is the other imporatant thing to be noted. Puri must not be too thick nor too thin. While frying , maintain the oil temperature that helps the puri to puff up. If u follow these simple tips you can make perfect puffed up puris.

INGREDIENTS
Wheat flour - 2 cups
Potato - 1, big sized, boiled, grated, mashed
Red chilly powder - half tsp, can add less
Turmeric powder - quarter tsp
Coriander powder- quarter tsp
Cumin seed - half tsp, slightly crushed with hand
Chopped coriander- 3 tbsp or more
Salt
Oil
You can also add carom seeds, fennel seeds, hing or any other spices. It is all up to your taste.
