It was Father’s Day last Sunday and one of my Dad’s favourite ever desserts is lemon meringue pie! So I made these to honour him.

Recipe:

Ingredients

For The Cupcakes:
115g Butter, softened (I like to use lactofree butter)
115g Caster Sugar
2 Medium Sized Eggs
115g Gluten Free Self Raising Flour (I like to use Doves Farm gluten free flour)
Zest Of One Lemon, grated

For The Meringue:
2 Medium Sized Egg Whites
110g Caster Sugar


Equipment:
Scales
Zester
12 Hole Cupcake/Muffin Tray
12 Cupcake Cases
Large mixing bowl x 2
Wooden spoon/Electric Hand Whisk
Spatula
Tablespoon x 2
Cooling rack
Large piping bag
Star shaped nozzle
Scissors
Tall glass
Elastic band


Method:

Firstly, measure out and prepare all of your ingredients. Then preheat your oven to 180C/160C Fan/Gas 4, also line a 12-hole muffin tin with paper cases.


For Your Cupcakes:

Grab your first mixing bowl, wooden spoon/electric hand whisk, spatula and all of your cupcake ingredients.

Place the butter and sugar in a mixing bowl and beat until pale and fluffy. Now, add the eggs one at a time, beating after adding each egg, until they are fully incorporated.

Fold in the flour and lemon zest until well combined. You can use the wooden spoon/electric hand whisk if you want, I did when my spatula wasn’t doing the job.

Grab your prepare cupcake/muffin tray and your ice cream scoop or tablespoon and a teaspoon or whatever you are going to use to get your mixture into your cupcake cases. Spread your mixture evenly between your cupcake cases. There may seem to not be a lot of mixture in each case, but don’t worry as mine were like that.

Once this is done, place your cupcakes into your preheated oven for 15 – 20 minutes until golden brown and springy to the touch.

While your cakes bake, prepare the meringue.

NOTE: If your cupcakes finish baking before you finished with your meringue, place your cupcake/muffin tray onto your cooling rack until you are ready to pipe the meringue.


For The Meringue:

Grab your second mixing bowl, wooden spoon/electric hand whisk, spatula and all of your meringue ingredients.

Place your egg whites into your mixing bowl and whisk the egg whites until soft peaks form.

Once this is done, gradually add the sugar whisking continually until stiff peaks form and the mixture is thick and glossy.

Grab your large piping bag, scissors, tall glass, elastic band and nozzle.

Placing the nozzle into your piping bag and snipping off the end to make it fit securely. Taking the tall glass, place the piping bag inside, wrap the edges around the top of the glass, using an elastic band to secure your piping bag in place, and finally add your meringue mixture.


All Together:

Remove the cupcakes from the oven, leaving the oven on, and put on a cooling rack, then pipe the meringue onto the cakes in whatever style you like, then return the cupcakes to the oven for 5 – 9 minutes until the meringue is set and tinged golden brown.

Remove from the oven and place on a cooling rack to cool completely.
