RECIPE FOR BAKER 40 x 22 cm
3 pcs eggs
80 g sugar
30 g marzipan
1 tsp rum
1 tsp vanilla sugar
40 g flour, type 405
40 g wheat starch
(cornstarch)
20 g cocoa powder, unsweetened
SAHNECREME
200 g chocolate coating
50 g milk
600 g cream
3 sheets of gelatine
50 g rum, Jamaica
MIRROR GLAZE
8 sheets of gelatine
100 g water
200 g cream
80 g glucose syrup
240 g sugar
80 g cocoa


PREPARATION:
Cream the eggs with the sugar and vanilla sugar. Gently fold in the flour, wheat starch and cocoa sifted with a wooden spoon.
Then spread the mixture on baking paper. A baking frame, 40 x 22 cm, would be advantageous.
Bake at 170°C convection oven for about 10 minutes. After baking, immediately slide onto a wire rack and let cool. Roll out a thin strip of 40 x 10 cm with the shortcrust pastry and bake at 160°C until golden brown.
Cut two strips of 40 x 10 cm from the chocolate base. Spread jam on shortcrust pastry strips and place a chocolate base on top.
Boil the milk and dissolve the couverture in it. Quickly stir in the gelatine dissolved in rum (54%).
Whip the ice-cold cream well. Stir a portion into the slightly warm dissolved couverture/gelatin, and immediately stir the chocolate cream back into the remaining cream.
Spread 1/2 of the cream on the chocolate strips, place the second chocolate cookie strip on top and spread the rest of the cream on the cake.
Preparation "Mirrorglaze
Bring water, glucose syrup and sugar to a boil until 110 °C ( weak thread) Add the boiling hot cream. Let cool down to about 50 °C. Squeeze the gelatine soaked in cold water well and add to it, stir well. Then stir in the sifted baking cocoa.
Pour the glaze, which has cooled to about 30 °C, over the frozen pastry.
The cake or pastry to be covered with the glaze MUST be frozen really stiff.



ZUBEREITUNG:
Die Eier werden mit dem Zucker und Vanillezucker schaumig gerührt. Mehl, Weizenstärke und Kakao gesiebt mit einem Kochlöffel vorsichtig darunter heben.
Anschließend die Masse auf Backpapier streichen. Ein Backrahmen, 40 x 22 cm, wäre von Vorteil.
Bei 170°C Umluft etwa 10 Min backen. Nach dem Backen sofort auf ein Gitter schieben und auskühlen lassen. Mit dem Mürbeteig einen dünnen Streifen von 40 x 10 cm ausrollen und bei 160°C goldgelb backen.
Aus dem Schokoboden zwei Streifen von 40 x 10 cm schneiden. Mürbeteigstreifen mit Marmelade bestreichen und einen Schokoboden auflegen.
Milch aufkochen und die Kuvertüre darin auflösen. Die mit Rum (54%) aufgelöste Gelatine flott darunter rühren.
Die eiskalte Sahne gut aufschlagen. Einen Teil unter die leicht warme aufgelöste Kuvertüre/Gelatine rühren, und die Schokosahne sofort zurück unter die restliche Sahne rühren.
1/2 der Sahne auf Schokostreifen streichen, zweiten Schokolade Biskuit Streifen auflegen und mit restlicher Sahne die Schnitte einstreichen.
Zubereitung „Mirrorglaze“
Wasser, Glucose-Sirup und Zucker aufkochen bis 110 °C („Schwacher Faden“) Die kochend heiße Sahne dazu geben. Auf etwa 50 °C abkühlen lassen. Die in kaltem Wasser eingeweichte Gelatine gut ausdrücken und darunter geben, gut durch-rühren. Anschließend den gesiebten Back-Kakao einrühren.
Das tief gefroren Gebäck mit der auf etwa 30 °C abgekühlten Glasur übergießen.
Der Kuchen oder das Gebäck, welches mit der Glasur überzogen werden soll MUSS richtig feststeif gefroren sein.
