Today I am showing you how to make my Simple Vanilla Cupcakes. But of course, it is going to be gluten free, lactose free and yeast free.

Equipment:
Scales
Measuring Spoons
12 – Hole Muffin or Cupcake Tin
12 Cupcake Cases
Cake Release Spray or Oil Spray
Mixing Bowl
Wooden Spoon/Electric Hand Whisk
Spatula
Tablespoons x 2/Tablespoon and Teaspoon
Teaspoon Handle/Cake Tester/Toothpick/Skewer
Cooling Rack
Ingredients:
150g Dairy Free Butter, softened (I like to use lactofree butter)
150g Caster Sugar
2 Medium Sized Eggs, beaten
1 tsp Vanilla Extract
150g Gluten Free Self-Raising Flour
Method:
Measure your ingredients and preheat the oven to 180C/160C Fan/Gas 4, also line a 12-hole muffin tin with paper cases.
Grab your mixing bowl, wooden spoon/electric hand whisk, your butter and your caster sugar and tip the sugar and butter into it.
Beat together until light and fluffy.
Grab your eggs, add them to your mixture and beat together until you have a smooth batter.
Grab your vanilla extract and again, add to your mixture and beat together until well combined.
Grab your flour and add, a little at a time to your mixture mixing all the time. Just before you have finished mixing scrape around the sides of your bowl with a spatula, or whatever you have access to, so you don’t loose any of that delicious mixture. Then mix one final time for good luck.
Once this is all done, grab your prepared cupcake tray, your spray oil and your tablespoons/tablespoon and teaspoon.
Spoon the mixture evenly into your cupcake cases scraping down the sides of your mixing bowl between each cupcake addition. I found that if you give the tray a little spray with oil, after putting your cases in, it means that when your cupcakes are cooked, the mixture doesn’t stick to the cases, meaning you don’t loose any of your scrummy cakes.
Now you can bake your cupcakes for 10 – 15 minutes. You can check if these are cooked using different ways, either by: inserting a teaspoon handle/cake tester/skewer and see if it comes out clean; touch it and it bounces back up; or finally, they are golden-brown on top.
After your cupcakes have finished baking, grab your cooling rack and place your cupcakes onto it, still in its tray to cool for 10 minutes.
Once this time is up, take your cupcakes out of its tray and place back onto your cooling rack to cool completely.
Serve and enjoy!
