Physical Properties of Glycosides:
1. Glycosides are crystalline colorless solids.
2. Non- reducing in nature and are generally laevorotatory.
3. They are soluble in alcohol & water.
4. Dilute acids and enzymes cause their hydrolysis.
Chemical Properties
1. Glycosides are easily hydrolyzed by water, mineral acid and enzymes. The glycone and aglycone portions can be chemically separated by hydrolysis in the presence of acid and can be hydrolyzed by alkali. For example Salicin glycoside, active constituent of salix bark, hydrolysed by mineral acid and separate in salicyl alcohol (Aglycone/ nonsugar part) and glucose (glycone/sugar part). (Except C- glycoside example Aloin need oxidative hydrolysis).
2. Strong and mild alkali hydrolyses eater group. They open lactone ring of Cardiac glycosides.
3. There are also numerous enzymes that can form and break glycosidic bonds.
4. The most important cleavage enzymes are the glycoside hydrolases, and the most important synthetic enzymes in nature are glycosyltransferases. Emulsin hydrolyses beta glycosides, maltase and invertase hydrolyses alpha glycosides.
