1. Eric Nash: The apples stood for sin, so maybe he killed his wife, felt terrible grief, and the the hat is now missing, to symbolize that he finally had a witness to his crime and respects are now paid, ergo the hat is no longer off.
2. DigestiveDunker: No wife as their is a single, bed. Lund was murdered, as there is a Forsworn camp (Bleakwind Bluff) nearby, with similar stone constructs to the grave. Perhaps the Forsworn killed Lund and framed the skeevers for his death, adding poison as a further decoy. There are some signs of a struggle, what with shelves hanging from the wall and books strewn across the floor. Perhaps the murderer(s) placed Lund on his bed to make it look like he had died or been murdered by his skeevers whilst asleep.
+ anthony beltramo suggests that lund may have been in a same sex marriage; the forsworn may consider this a sin (hence the apples).
3. Ben Dover: Lund's wife was one of the Rorikstead sacrifices (see ESO's video), and so he moved into a smaller home and kept skeevers as pets. She was pregnant, and was one of the women that the townsfolk were told died while giving birth. Lund participated in his wife's sacrifice, and his remorse and self-loathing drove him to alcoholism. One night in a drunken fit of rage he ransacked his home and destroyed his books of Daedric lore. He then ingested poison and lay down in his bed to die. The apples symbolize the sin of her murder, and his plea for redemption.๏ปฟ
