Making Cornbread Muffins with a twist, using Sweet Potatoes!! Perfect for your favorite meals and don't forget the Butter!!! You can also do a round or long pan of Cornbread instead of the Muffins!
Sweet Potato Cornbread Muffins
1 cup self rising cornmeal mix, sifted
1 cup self rising flour, sifted
3/4 cup white sugar
1/4 tsp ground nutmeg, sifted
2 jumbo eggs, room temperature
1/2 cup mascarpone cheese
1 cup evaporated milk
1/2 stick (1/4 cup) unsalted butter, melted and cooled
1 1/2 cups sweet potatoes, cooked and mashed
Note: Make sure you taste the batter for more sugar before adding the eggs and mascarpone cheese. Put the mascarpone cheese in the microwave for a few seconds to get slightly melted (not all the way melted). You can use all purpose four and regular cornmeal but add 1/2 tsp salt and 2 tsp baking powder. You can also bake the sweet potatoes instead of boiling them.
Preheat oven to 425 degrees
In a large bowl, add cornmeal, flour, sugar, nutmeg, evaporated milk, sweet potatoes and melted butter. Mix them until well combined. In a small bowl, mix eggs and mascarpone cheese together then add it to the Sweet Potato Mixture and continue mixing until well blended. Using a Ice Cream Scoop, scoop in 3/4 of the way up into your Muffin Pans with Paper Liners or greased Muffin Pans. Bake Muffins for 20-25 minutes or until golden brown. Test with a toothpick. Remove from Oven and sit on a cooling rack. Serve piping hot or let them cool.
