Episode 146: Homemade Eggnog Video

Today I am making the Holiday Classic, EGGNOG! It is so rich, creamy, decedent, and it is the Best Eggnog you’re ever had! Once you taste it, you won’t buy it from the Store again! Happy Birthday Sis. Linda!

2 cups evaporated milk
1 tsp. pumpkin pie spice
6 egg yolks
1/2 cup white sugar
1 cup half and half
1 tsp vanilla extract
Whipped cream and pumpkin pie spice, for garnish

Cook’s Note: After cooking, strain eggnog for any lumps of cooked eggs. You may also Rum, Bourbon, etc to the eggnog for a little kick of Flavor.

In a small bowl, add egg yolks and sugar; whisk until pale yellow and set aside. In a medium saucepan on low heat, combine evaporated milk and pumpkin pie spice. Slowly bring mixture to a low boil. Slowly add hot milk mixture to egg yolks to temper the eggs and whisk until combined. Return mixture to saucepan and cook over medium heat until slightly thick (don’t boil, If using a candy thermometer, mixture should reach 160º.) Remove from heat and stir in half and half and vanilla. Let eggnog cool at room temperature them place in a pitcher and refrigerate until chilled about 4-5 hours. Place eggnog in a glass and garnish with whipped cream and pumpkin pie spice.
