Thotakura pulusu is an amazing dish that tastes tangy and spicy. Thota kura also known as Amaranth leaves are very popularly cooked in most of the south Indian homes. This thotakura pulusu/ Amaranth leaves stew is served as a side dish along with rice.

Ingredients
Thotakura/Amaranth- 3 cups
Tamarind pulp - 2 tbsp
Methi powder - 1 tsp
Sesame Seeds - 1.5 tbsp
Cumin - 1/4 tsp
Mustard seed powder - 1 tsp
Red Chili Pwd - 1/2 tsp
Green Chilies - 2
Salt - as requird
Turmeric - 1/4 tsp
Asafoetida- pinch
Sugar - 1/2 tsp

1. Cook thotakura in a pressure cooker along with green chilies and a cup of water. Pressure cook for 3 whistles.

2. Mash it well and add tamarind pulp, Salt, turmeric, sugar and methi powder. Bring it to a boil twice. and switch off the flame.

3. Dry roast sesame seeds and cumin till color changes and grind it to a coarse powder.

4. Cool the stew/ pulusu and then add sesame seed powder and mustard seed powder.

5. Add seasoning by crackling some mustard seeds , asafoetida and red chili powder.
