Today I am showing you how to make my Simple Carrot Cake Cupcakes. But of course, it is going to be gluten free, lactose free and yeast free.

Equipment:
Scales
Measuring Spoons

12 – Hole Muffin or Cupcake Tray
12 Cupcake Cases
Cake Release Spray or Oil Spray
Mixing Bowl
Wooden Spoon/Electric Hand Whisk
Tablespoons x 2 (optional)
Ice Cream Scoop (optional)
Tablespoon (optional)
Teaspoon (optional)
Cake Tester/Skewer/Toothpick/Teaspoon Handle
Cooling Rack
Ingredients:
150g Butter, softened (I like to use lactofree butter)
150g Light Muscovado Sugar
2 Medium Eggs, beaten
150g Gluten Free Self Raising Flour
1/2 tsp Ground Mixed Spice
75g Carrots, grated
75g Walnuts, chopped (optional)
Method:
Firstly, measure out your ingredients and preheat your oven to: 180˚C; 160˚C Fan; Gas Mark 4.
Line your 12 – hole muffin or cupcake tray with your 12 cupcake cases.
Now that you have done all that prep-work, grab your wooden spoon/electric hand whisk, your mixing bowl, your spatula, and all of your ingredients.
Add your butter and sugar into your mixing bowl and mix until smooth and fluffy.
Now, add in the eggs and again, mix together until you have a nice smooth batter.
Add all of your ground mixed spice to your mixture and mix until fully combined.
Then, still mixing all the time, add a little bit of your flour to your mixture at a time, until fully combined.
Add the grated carrots and mix until your mixture is well combined.
Then, still mixing all the time, add a little bit of your walnuts (if using them) to your mixture at a time, until fully combined.
Grab your prepared muffin or cupcake tray and whatever you are using to move your cupcake mixture into your cupcake cases.
Using either a ice cream scoop, two tablespoons, or a tablespoon and a teaspoon, spread your mixture evenly between your cupcake cases, scraping down the sides of your bowl, with your spatula, so that you don’t loose any of that mixture.
Once your mixture is evenly spread, place into your preheated oven for 10 – 15 minutes. You can check if these are cooked using different ways, but I prefer inserting a teaspoon handle/cake tester/skewer and seeing if it comes out clean.
After they have finished baking, grab your cooling rack and place your cupcakes onto your cooling rack, still in their tray for 10 minutes.
Once those 10 minutes are up, take your cupcake cases out of their tray and place them back onto your cooling rack to cool completely.
Serve and enjoy!
