Chicken - 500 g, cut into small pieces
white part of spring onion - 2 tbsp or more
Garlic - quarter a cup, chopped
Ginger - a small piece, finely chopped
Green chilies -3 nos or more, sliced
Cornflour - 2 tsp, mixed in half a cup of water
Salt to taste
Celery, spring onion chopped for garnishing
Oil for deep frying and sauteing
For chicken marination
Soy sauce - 1 tbsp, light soy sauce
Egg white - of one egg
Garlic paste - half tbsp
All purpose flour / maida - quarter a cup
Cornflour - quarter a cup
Salt - to taste, add less
For the sauce
Tomato sauce -half a cup
Red chili sauce - 3 tbsp (i soaked 5 dried red chili, half tsp fennel seed and 2 garlic cloves in hot water...and then blend well to a thick paste along with a tsp of vinegar....add fewer chilies if less heat preferred)
Soy sauce - 1 tbsp
Sugar - 1 tsp
vinegar - half tsp
