MICROGREEN SALADS FOR A WORKWEEK
(MAKE THIS YOUR OWN, with your preferred veggies and herbs!)
1 container (5 oz) baby greens mix
1 good handful fresh mint, chopped
1 tomato, chopped
1 cucumber, chopped
1 red pepper, chopped
3 carrots, grated
1 slab jicama, grated
1/2 container of sprouts
Put out 5 containers with lids.
Assembly-line style, layer each ingredient into each container. (Go down the line. Lettuce in all containers. Mint in all containers. Peppers in all containers. You get the idea.)
Top each container and put in the fridge. When you are ready to eat, take a container out and take the top off. Top with 2-3 TB seeds or nuts and a tablespoon or so of dressing. Lunch was never so easy or amazing!
