Singapore Spicy Noodle Soup (Singapore Recipe) Chinese Style Cooking

Welcome to Xiao's Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes.

Serves 4
50g Thin Rice Noodles
1 Tsp Curry Powder
½ Tsp Ground Coriander
½ Tsp Ground Turmeric
½ Onion
1 Spring Onion
½cm Ginger
2 Cloves Garlic
2 Red Chillies
4 Stems Coriander
100ml Coconut Milk
2 Tbsp Peanut Oil
1 Tbsp Sugar
800ml Chicken/Vegetable Stock
Salt to Taste

1. Slice onion, chillies and spring onion into thin threads
2. Finely chop the ginger, garlic and coriander
3. Heat oil in the wok and fry the onion on medium heat for 2 minutes until soft
4. Add ginger, garlic and chillies, fry for a minute
5. Add turmeric and ground coriander, fry for few seconds
6. Add the stock, bring to the boil, then simmer for 15 minutes
7. Pour in the coconut milk; add curry powder, sugar and salt. Simmer for 3 minutes on low heat
8. Add the rice noodles and simmer for 5 – 8 minutes
9. Add spring onion, coriander and stir
10. Transfer to a bowl and serve
