Today I am showing you how to make my Simple Victoria Sponge Cake. But of course, it is going to be gluten free, lactose free and yeast free.

Recipe

Equipment:
Scales
Measuring Spoons
20cm/8 – inch Sandwich Tin x 2
Baking Paper
Pencil
Scissors
Spray Oil or Cake Release Oil
Large Mixing Bowl x 2
Wooden Spoon/Electric Hand Whisk
Spatula
Cake Tester/Skewer/Toothpick/Teaspoon Handle
Cooling Rack
Plate

Ingredients

For The Cake:
200g Butter, softened (I like to use lactofree butter)
200g Caster Sugar
4 Medium Eggs, Beaten
200g Gluten Free Self-Raising Flour
1 tsp Gluten Free Baking Powder

For Fillings:
50g Butter, Softened (I like to use lactofree butter)
70g Icing Sugar, Sifted
1 teaspoon Vanilla Extract (optional)
170g Good-Quality Strawberry Jam


Method

For The Cake:

First things first, measure out all of your ingredients and preheat your oven to 190C/fan 170C/Gas Mark 5.

Grab your two 20cm sandwich tins, baking paper, pencil, scissors and spray oil/cake release oil. Now grease and line your two tins.

Now that you have done all that prep-work, grab your wooden spoon/electric hand whisk, your first mixing bowl, your spatula, and all of your cake ingredients.

In your first mixing bowl, add butter and sugar and mix until pale and fluffy.

Then add in your eggs and mix until you have a nice smooth batter.

Once this is done, add your vanilla extract and mix until well combined.

Now, add all of your baking powder and mix until well combined.

Then, mixing all the time, add a little bit of your flour to your mixture until fully combined.

Now, grab your prepared sandwich tins and spread your mixture evenly between them.

Then place into your preheated oven for 20 – 25 minutes until golden and the cake springs back when pressed or a until you insert a cake tester/skewer/toothpick/teaspoon handle inserted into one of the cakes comes out clean.

After this time is up, grab your cooling rack and place your cakes onto it, still in their tins for 10 minutes to cool.

Once those 10 minutes are up, take your cakes out of their tins and place back onto your cooling rack to cool completely.


For The Filling:

Grab your wooden spoon/electric hand whisk, your second mixing bowl, your spatula, and all of your filling ingredients.

Add your butter into your mixing bowl and then mix until smooth and creamy.

Then mixing all the time, add a little bit of your icing sugar to your mixing bowl until well combined.

Now, add your vanilla extract if you’re using it and mix until fully combined.


All Together:

Grab your cooled cakes and your plate.

Place your first cake slice onto your plate and, using your spatula, spread the buttercream icing over it.

Then using the same spatula, spread the jam over the other half of your second cake slice. You can do this the other way around if you want to.

Once this is done, place the second cake slice onto of the first cake slice and press down slightly to spread the buttercream and jam a tiny bit more.

Serve and enjoy!
