Sichuan Razor Clams (Chinese Style Spicy Seafood Recipe)

Welcome to Xiao's Kitchen. My name is Xiao Wei and my goal is to make your cooking simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for cooking. My family still live in Inner Mongolia, in the northern part of China, where I visit each year and learn new Chinese recipes.

1kg Razor Clams
8 Cloves Garlic
40g Ginger
2 Tbsp Sichuan Peppercorns
1 Small Onion
6 - 8 Dried Red Chillies
25g Coriander
1 Tbsp Light Soy Sauce
1 Tsp Cooking Wine
1 Tbsp Sugar
Salt to Taste

1. Clean inside the clams under running water
2. Finely chop the ginger, garlic and chilli
3. Thinly slice the onion and roughly chop coriander
4. Heat 2 Tbsp oil in the wok
5. Add the peppercorn, chilli, garlic and ginger, fry for half of a minute
6. Add the onion, stir fry for a minute
7. Add the razor clams and stir
8. Add the cooking wine, soy sauce, sugar and stir
9. Cover the wok and cook for 2 to 3 minutes
10. Remove the cover, add coriander and stir
11. Transfer to a dish and serve hot
