Making everyone's favorite Comfort Food with a homemade Cheese Sauce! The perfect Side Dish for Weeknight Dinners, Sunday Soul Food, and the Holidays!
1 pound cavatappi (cork screw shape) pasta
4 cups whole milk
6 tbsp butter
1/2 cup all purpose flour
1 egg yolk, slightly beaten
1/2 tsp ground mustard
1/4 tsp sugar
Salt and white pepper, to taste
2 cups sharp cheddar cheese, grated
2 cups Colby jack cheese, grated
Shredded Velveeta cheese, for the top
Note: You can use any kind of Pasta of Seasonings of your choice.
Preheat oven to 350 degrees
Cook pasta in boil salted water until al dente. Drain and set aside. Melt butter in a large pot over medium heat. Add flour and cook, stirring for 1-2 minutes. In another pot add milk and let it get warm. Whisk in warm milk to the butter and flour mixture. Add a ladle of the milk mixture to the beaten egg yolk to temper and whisk it back into the mixture and whisk constantly. The mixture will thicken as the heat increases. Remove from the heat and continue to stir while adding ground mustard, sugar, salt, and white pepper. Stir in the sharp cheddar and Colby jack cheeses until it melts. Pour the cooked pasta into the cheese sauce and stir until pasta is all covered in cheese sauce. Pour pasta mixture into a buttered 13-9 inch baking dish. Bake for 30-35 minutes. Add shredded Velveeta on top 5-10 minutes before it's done to melt. Let it rest for 5 minutes, serve and enjoy.
