Today I am showing you how to make my Lemon Cupcakes. But of course, it is going to be gluten free, lactose free and yeast free.

Recipe
Equipment:
Scales
Grater/Zester
12 β Hole Cupcake/Muffin Tray
12 Cupcake Cases
Large Mixing Bowl
Wooden Spoon/Electric Hand Whisk
Spatula
Tablespoons x 2
Cake Tester/Skewer/Toothpick/Teaspoon Handle
Cooling Rack
Ingredients:
150g Dairy Free Butter, softened
150g Caster Sugar
2 Medium Sized Eggs, beaten
150g Gluten Free Self-Raising Flour
Zest of 1 Lemon
Method:
First things first, measure out all of your ingredients and preheat your oven to 180C/160C Fan/Gas Mark 4.
Also prepare your cupcake/muffin tray with your cupcakes cases.
Now that you have done all that prep-work, grab your wooden spoon/electric hand whisk, your mixing bowl, your spatula, your butter and caster sugar.
Place your butter and caster sugar into your mixing bowl/stand mixer, then mix together until light and fluffy.
Now, grab your eggs.
Add in the eggs and beat together until you have a nice smooth batter.
Then, grab your flour.
Add your flour a little at a time to your mixture mixing all the time until fully combined.
After that, grab your lemon zest.
Now, add in your lemon zest, then mix until well combined.
Now, grab your two tablespoons and your prepared cupcake/muffin tray.
Using your two tablespoons, spread the mixture evenly into your cupcake cases.
Bake your cupcakes for 10 β 15 minutes. You can check if these are cooked by inserting a cake tester/skewer/toothpick/teaspoon handle and see if it comes out clean.
After this time, grab your cooling rack and place your cupcakes onto it, still in its tray to cool for 10 minutes.
Once this time is up, take your cupcakes out of its tray and place back onto your cooling rack to cool completely.
Serve and enjoy!
