♡ 250g (2¾ cup) self raising flour + a little for dusting
♡ 50g (¼ cup) caster sugar
♡ 50g (slightly less than a ¼ cup) chilled and diced unsalted butter
♡ 100ml (just under half a cup) buttermilk
♡ A good pinch of salt
♡ 1 medium free-range egg
♡ 400g (2⅔ cups) glacé cherries
Equipment you will need:
♡ Mixing bowl
♡ A jug or something to mix the buttermilk and egg in
♡ Another bowl to toss your cherries in flour
♡ 6cm fluted cutter
♡ Rolling pin
♡ Baking sheet
♡ Non-stick greaseproof/baking paper to line baking sheet
♡ Spatula
♡ Whisk
Method:
1. Preheat your oven to 200°C/390°F (fan assisted).
2. Sift the sugar, flour and salt into your mixing bowl and give it a quick whisk.
3. Add your chilled and diced unsalted butter and toss around in the dry ingredients to coat.
4. With cold hands, rub the butter into the dry mixture with the tips of your fingers until it resembles breadcrumbs.
5. In a separate jug, beat the egg and buttermilk until combined.
6. Make a small well in your dry ingredients and pour in your egg mixture. Then using a spatula bring the ingredients together, but be careful not to over work the dough or your scones will come out tough – the less handling the better.
7. In a separate bowl toss your cherries in flour to dry them out a little and then gently stir these into your dough and try to get an even distribution of cherries.
8. Turn your dough out onto a floured worktop, roll out to 3mm thick and give it a light dusting of flour.
9. Cut out your scones using a fluted cutter and place onto a baking sheet with plenty of space between each one. You can press your trimmings together to make more scones, but remember as little handling as possible for a light crumbly scone!
10. Bake in the oven for about 12 minutes or until light brown.
11. Enjoy with good quality cherry jam and a good spoon of Cornish clotted cream.
