時短できる重曹を使った簡単なタケノコのアク抜き
材料:

重曹
使うもの
大きい鍋
やり方ポイント
重曹を使って2回ボイルしてアク抜きをします。重曹でたけのこの灰汁が水に溶け出します。1回目で濃いアク抜いて灰汁がタケノコに移る前に、さらに2回目で灰汁を抜ききります。
筍の大きさによって茹で上がり時間が変わるので2回目のたけのこの茹で上がりで火が通っているか確認して調節してください。確認したら筍を鍋に入れっぱなしにしないで、すぐにお湯を捨ててください。
重曹のアク抜きでは茶色く変色しやすいですが簡単に短時間にアク抜きができて時間の短縮できます。また、このゆで方で重曹の量が多すぎたり長い時間浸けすぎていると茶色が濃く変色しやすいので注意してください。
たけのこが多い場合は同じ割合で重曹と水を足してください。
