Learn how to make smoked salmon egg fried rice from Xiao's Kitchen

Welcome to Xiao's Kitchen. My name is Xiao Wei and my goal is to make your cooking simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for cooking. My family still live in Inner Mongolia, in the northern part of China, where I visit each year and learn new Chinese recipes.

Serves: 4
500g Cooked Rice
2 Eggs (beaten)
1 Onion (finely diced)
2 Spring Onions (finely chopped)
200g Smoked Salmon (cut into bite-size pieces)
80g Frozen Peas
1 Tsp Coarse Black Pepper
Salt to taste

1. Heat 1 Tbsp of oil into a wok over high heat
2. Place the eggs in the wok, stir and cook until scrambled and set, remove from wok
3. Using the same wok, heat 2 Tbsp oil over high heat
4. Add the onion and spring onions, stir-fry for 2 minutes
5. Add the peas and stir-fry for 2 minutes
6. Add the egg and salmon, black pepper and small pinch of salt, gently stir and cook for a minute
7. Add the rice, stir-fry for 5 minutes until heated through
8. Transfer into a dish and serve
