Making a Southern Classic and also another favorite Pie growing up!! It is also the perfect dessert to have for your Holiday Dinner coming up!!
2 medium-large sweet potatoes, peeled and drained
4 oz cream cheese, softened
1/4 cup (1/2 stick) unsalted butter
1/3 cup evaporated milk
1/2 cup sweetened condensed milk
1 jumbo whole egg
1 jumbo egg yolk
1 tsp vanilla extract
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/8 tsp ground ginger
1/8 tsp ground allspice
1 (9 inch) deep dish pie crust
Optional: If the filling ain't too sweet add a whole can (14 oz) sweetened condensed milk and add 1/3 cup or more white sugar. You can also add a little more evaporated milk if you want the filling a little loose but not to loose.
For the Crust,
Preheat oven to 325 degrees. Poke holes on the bottom of pie crust. Bake Pie Crust for 10 minutes to get a little golden brown.
For the Sweet Potato Pie,
Preheat oven to 350 degrees. Peel sweet potatoes and cut into chunks. Boil until tender; drain. Put cooked sweet potatoes into a large bowl and mash real good. Then add cream cheese and butter into the warm sweet potatoes and stir until it melts. Then stir in evaporated milk, sweetened condensed milk, vanilla, and spices. Taste to see if it need sweetened some more. Then add eggs and mix until well combined. Pour into pie shell. Bake Pie for 35-45 minutes until filling is set in the middle and crust is golden brown. Remove Pie from the Oven and set on a wire rack. Serve warm or at room temperature. Serve with whipped cream, optional.
