Best Chinese chilli chicken stir-fry, quick and easy recipe

Welcome to Xiao's Kitchen. My name is Xiao Wei and my goal is to make your cooking simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for cooking. My family still live in Inner Mongolia, in the northern part of China, where I visit each year and learn new Chinese recipes.

2 Chicken Breasts (Cut into thin strips)
1 Green Pepper (Cut into thin strips)
1 Red Pepper (Cut into thin strips)
3 Cloves Garlic (Finely chopped)
1 Red Chilli (Chopped)
1 Egg (Beaten)
50g Plain Flour
1 Tbsp Chilli Sauce
3 Tbsp Light Soy Sauce
2 Tbsp Tomato Puree
1 Cup of Water
Salt to Taste

1. Place the chicken strips in a bowl, add the egg and flour, mix well for an even coating
2. Heat 3 Tbsp oil in the wok over high heat
3. Place chicken into the wok, stir-fry until golden brown
4. Add the peppers and stir fry for a minute, remove from wok
5. In the same wok, add the garlic, chilli, soy sauce, tomato puree, chilli sauce and the water, stir well, bring to the boil
6. Return the chicken and peppers in the wok, add a pinch of salt and stir, cook for 2 minutes
7. Transfer into a dish and serve with rice
