Max Bazaliy's presentation on jailbreaking the Apple Watch has been finally published on DEF CON's YouTube channel, so of you're interested in how has this jailbreak been achieved, you can take a look at it. It is not a long video, 36 minutes in which Max presents exactly which vulnerabilities he exploited and how in order to achieve the Jailbreak. It's very interesting, and if you're interested in Jailbreaking in general and want to be more than a simple user, these presentations really help you understand way better what's going on behind jailbreak tools.
Now, for granted, the question remains, what can you really do with a jailbroken Apple Watch ? Well, as Max has mentioned in his talk, you're able to explore the system further on. Normally, compared to iOS currently, the WatchOS is encrypted and there are no public decryption keys for its Firmware, this means that you must dump the kernel! Dumping the kernel used to be a thing on iOS until iOS 10 came out and it was not encrypted so it was no longer necessary.
Aside of the fact that one can explore the system further, one can also install Radare for example, or other debugging tools. It can also serve as an attack vector for the iOS.
The Apple Watch communicates with the iPhone, therefore, you might be able to send malformed data to it and trigger a Payload.
