Today I am showing you how to make my Simple Orange Tray Cake. But of course, it is going to be gluten free, lactose free and yeast free.

Recipe
Equipment:
Scales
Grater/Zester
34cm Oven/Baking Tray
Spray Oil or Cake Release Oil
Baking Paper
Large Mixing Bowl
Wooden Spoon/Electric Hand Whisk
Spatula
Cake Tester/Skewer/Toothpick/Teaspoon Handle
Cooling Rack
Ingredients:
200g Butter, softened (I like to use lactofree butter)
200g Caster Sugar
4 Medium Eggs, Beaten
Zest of Two Oranges
200g Gluten Free Self-Raising Flour
Method:
Firstly, measure out your ingredients and preheat your oven to: 190หC; 170หC Fan; Gas Mark 4.
Grease and line a baking tray.
Now that you have done all that prep-work, grab your wooden spoon/electric hand whisk, your mixing bowl, your spatula, and all of your ingredients.
Place your butter and sugar into your mixing bowl and mix together until pale and fluffy.
Now, add in your eggs and mix until you have a nice smooth batter.
Once this is done, add in your orange zest and mix until well combined.
After that, add the flour, a little at a time, and mix for the final time until fully combined.
Grab your prepared oven tray and pour the mixture into the tray and spread to all corners and make it as flat a possible. I achieve this by using a spatula and shaking the mixture in all directions, making sure that the mixture goes into all the corners.
Now, place into your preheated oven and bake for 15 โ 20 minutes, or until golden-brown on top and a cake tester/skewer/toothpick/teaspoon handle is inserted into the cake comes out clean.
After this time, grab your cooling rack, place your cake, still in its tray onto your cooling rack for 10 minutes.
Then remove from the cake from your tray and place back onto your cooling rack to cool completely.
Serve and enjoy!
