Today I am showing you how to make my Tanya Burr Vanilla Cookies. But of course, it is going to be gluten free, lactose free and yeast free.

Recipe

Equipment:
Scales
Measuring Spoons
Baking Tray/Cookie Sheets x 2
Baking Paper
Mixing Bowl
Wooden Spoon/Electric Hand Whisk
Spatula
Tablespoon (optional)
Teaspoon (optional)
Ice Cream Scoop (optional)
Cooling Rack

Ingredients:
100g Butter, softened (I like to use lactofree butter)
150g Caster Sugar
Half a Medium Egg, Beaten
2 tsp Vanilla Extract
150g Gluten Free Self-Raising Flour


Method:

First things first, measure out all of your ingredients and preheat your oven to 200C/180C Fan/Gas Mark 6.

NOTE: Check out how to half your egg with my tip video below.

Line your cookie sheets or baking trays (whatever you have access to) with baking paper and cake release oil spray/spray oil. I find using the spray oil really helpful as it keeps the baking paper in place while I am making my cookies.

Now that you have done all that prep-work, grab your wooden spoon/electric hand whisk, your mixing bowl, your spatula, and all of your ingredients.

Add your butter and sugar to your mixing bowl and mix until light and fluffy.

Add in your egg and mix until you have a nice smooth batter.

Now, add in your vanilla extract and mix until well combined.

Once this is all done, mixing all the time, add a little bit of your flour to your mixture until fully combined.

Grab your prepared baking trays/cookie sheets and take and handful/tablespoon of your mixture and place on your cookie sheets or baking tray. Make sure you leave enough room between them as they do spread out quite a bit.

Once this is all done, place your baking trays/cookie sheets into your preheated oven and bake for 11 minutes.

After this time is up, grab your cooling rack and place your cookies, still on their baking trays/cookie sheets for 10 minutes to cool.

P.S. โ€“ They will not look cooked, but donโ€™t worry, just trust me when I say that they are!!! They are meant to be like that so that when they have cooled down, they will be all chewy on the inside.

Then after those 10 minutes, take your cookies off of their baking trays/cookie sheets and place them back onto your cooling rack for a further 20 minutes. At this point, they will be incredibly fragile so be careful and take your time with them.
