INGREDIENTS for the fish marinade

Small sardines - 16 nos
Kashmiri chili powder - 1 tsp
Pepper powder - 1 tbsp
Coriander powder - 2 tbsp ( pls add more coriander powder)
Turmeric powder - half tsp
Vinegar - 2 tbsp
Salt as required
Make a very thick marinade. Add very little water only for making the marinade.
Marinate the sardines with this marinade.

Lunch meal is incomplete without any fish fry especially for Keralites. Kerala fish fry recipe is very popular because of it's special marinade. The spice powders used to marinate the fish makes the fried fish so special in taste and flavor. I used to make special marinade for sardines and mackerel.For this fish marinade, I combined kashmiri chili powder, turmeric powder, coriander powder, pepper powder , salt and vinegar along with very little water to make a thick marinade. I prefer very thick marinade for making any fish fry recipes as it tastes awesome. Moreover I used to add more coriander powder for making the marinade that makes my fish fry recipes so special ... I guess most of them use more chilli powder while marinating fish. Right?. But do try this once, am sure u will feel the difference . Sardines pepper fry is my favorite all the time.
