Patlıcan Çığırtma (Bergama Yöresi )
Malzemeler
1 kg patlıcan
5-6 adet iri domates
4-5 adet yeşil biber
3-4 diş sarımsak
Kızartmak için sıvı yağ ( zeytinyağı)
Hazırlanışı;
1.Yıkanan patlıcanlar alacalı şekilde soyulur ve uzun olarak doğranır.
2.Tuzlu suda bir müddet bekletilir.
3.Biberler saplarından ayrılır çekirdekleri temizlenir.
4.Kurulanan patlıcan ve biberler yağda kızartılır. ( Bergama da zeytinyağı ile kızartılır)
5.Domatesler soyulur küp küp doğranır, aynı tavada kızartma işlemi bittikten sonra fazla yağ süzülür ( bir miktar kalır) kızarmış patlıcan ve biberler yerleştirilir.
6.Üstlerine doğranmış domates ve sarımsaklar tercih miktarı tuz ilave edilir.
7.Bir kapak katılır, domatesler eriyene kadar pişirilir.
Afiyet olsun. (aslında yukarıda yazılan malzeme miktarı görecelidir. Tercih etiğiniz miktar bu yöntemle pişirilir. Babamın memleketi Bergama'da odun ateşinde yapılır, tadına doyulmaz)
