Cheesy Lemon Rice Cassrole Video

Try out this super quick and easy Vegetable Rice Casserole. It makes a great variation for regular Vegetable Pulao. Makes a perfect interesting recipe for kids loaded Vegetable rice with protein rich cheese. A win win recipe for kids..

Ingredients -

• 1 tbsp Butter
• 1/2 cup diced Onion
• 1 tsp Garlic
• 1 finely chopped green Chilli
• Diced red and green Pepper
• Mixed Herbs
• Chilli flakes
• Black Pepper
• Salt to taste
• Boiled Rice
• Coriander leaves
• Lemon juice
• 4 tbsp Cream cheese
• 1/2 cup cheese

Method -

• Heat a pan on medium heat. Add butter.
• When butter melts add onion. Mix well. Cook for 1-2 minutes.
• Add garlic, green chili, red and green pepper. Stir well. Cook
for another 1-2 minutes.
• Add mixed herbs, chili flakes, black pepper powder, salt to
taste. Mix well. Cook for 2-3 minutes.
• Add boiled rice. Mix well. Add coriander leaves, lemon juice,
cream cheese and grated cheese.
• Mix well and cook for another 1 minute.
• Pour out the rice in a microwave safe bowl. Add some more
cream cheese and grated cheese.
• Cook in microwave for 350 degree Fahrenheit or 180 degree
Celsius.
• Take the bowl out and serve the rice in a serving dish.
• Garnish with red pepper and cilantro and coriander leaves.
