Today I am showing you how to make my Sugar Cookies. But of course, it is going to be gluten free, lactose free and yeast free.

Recipe

Equipment:
Scales
Measuring Spoons
Baking Paper
Baking Trays/Cookie Sheets x 2
Large Mixing Bowl
Wooden Spoon/Electric Hand Whisk
Spatula
Rolling Pin
Cookie Cutter
Cooling Rack

Ingredients:
113g Butter, softened (I like to use lactofree butter)
113g Caster Sugar
1/2 Medium Egg, beaten
3/4 tsp Vanilla Extract
265g Gluten Free Self Raising Flour
Icing Sugar, for rolling


Method:

First things first, measure out all of your ingredients and preheat your oven to 180C/160C Fan/Gas Mark 4.

NOTE: Check out how to half your egg with my tip video below.

Line your baking trays/cookie sheets with baking paper, using the spray oil to hold the paper in place.

Now that you have done all that prep-work, grab your wooden spoon/electric hand whisk, your mixing bowl, your spatula, and all of your ingredients except for your icing sugar.

Add your butter and sugar to your mixing bowl and mix until light and fluffy.

Add in your egg and vanilla extract and mix until you have a nice smooth batter.

Now, add a little bit of your flour to your mixture, mixing all the time, until your mixture is fully combined and forming a stiff dough.

Grab your rolling pin, cookie cutter, and your icing sugar.

Sprinkle some icing sugar on to a work surface and half your dough.

Roll out your dough until it is 1/4 inch thick.

Now, grab your prepared baking trays/cookie sheets.

Cut out your shapes and place straight onto your prepared baking trays/cookie sheets.

Do this with all of your remaining dough until you don’t have enough dough to make any more cookies.

Repeat this process with the other half of your sugar cookie dough.

Now, your baking trays/cookie sheets into the oven and bake for 14 minutes.

Once your cookies have finished baking, grab your cooling rack and place your cookies, still on their baking trays/cookie sheets, and leave to cool for 10 minutes.

Then, remove your cookies from their baking trays/cookie sheets and place back onto the cooling rack to cool completely.

Serve and enjoy!
