撻皮:
低筋麵粉 75g Cake Flour
粟粉 10g Corn Starch
無鹽牛油 40g Unsalted Butter
糖 25g Sugar
雞蛋 20g Egg
鹽 1.5g Salt

蛋漿:
熱水 70g Hot Water
糖 25g Sugar
花奶 55g Full Cream Evaporated Milk
雞蛋 20g Egg
鹽 一撮 Salet

1.牛油先放在室温變軟身，加入糖，把材料揉合，麵粉和粟粉過篩，拌勻
2.把蛋打發，加鹽，攪拌均勻後，把蛋液加進麵粉和牛油裡，混合均勻成麵團
3.把麵團分成六份，先壓平，用模具壓出圓形再放上去，把底部壓薄些，冷藏一小時或過夜
4.熱水加入糖和鹽，加入淡奶，拌勻
5.把蛋打發均匀，加入奶水裡，拌匀，把蛋漿過篩，冷藏
6.把塔皮和蛋漿放回室温
7.把塔皮放在烤盤上，加入蛋漿，以180度烤10分鐘，完成
