Ingredients:
3 cups cooked rice
2 medium onion, chopped
4 large tomatoes, chopped
medium capsicum/green bell pepper, chopped
1 tsp ginger garlic paste
¼ tsp turmeric powder/haldi
3 tsp pav bhaji masala or add as required
½ tsp cumin seeds/jeera
2 tbsp butter or oil
2 small carrots, chopped
1 medium potato, chopped
½ cup green peas/matar, fresh or frozen
a few chopped coriander leaves
salt as required
Method:
1. Cook rice the way you prefer, allow the rice cool and keep it aside. Rice should not be mushy.
2. Boil the carrots, potato and green peas till all of them are cooked well in a steamer, pan or pressure cooker. Keep aside.
3.In a pan or kadai melt the butter. Add the cumin and fry them till they get browned. Add the finely chopped onions and saute till translucent.
4. Add the ginger garlic paste and saute till the raw aroma goes away.
5. Then add the finely chopped tomatoes and capsicum.
6. Stir and add all the spice powders – turmeric and pav bhaji masala.
7. Stir again and saute the whole mixture till you see butter releasing from the sides.
8. Add the chopped potato, carrot and peas. sprinkle salt and mix well.
9. Add the cooked basmati rice and gently mix the veggies with the rice.
10. Mix well and Garnish with coriander leaves.
