Coriander leaves - 1 cup Garlic - 3 pods
Basmati rice - 1.5 cups Cashews - 6-8
Onion - 1 mediumCardamom - 2
Chopped carrot - 1/2 cup Cloves - 4
Chopped beans - 1/2 cup Star Anise - 1
Green peas - 1/4 cupGreen chilies - 4
Ginger - 1'' pieceBay leaf -2
Step 1: Chop the vegetables
Step 2: Soak rice. For 1.5 cups of rice take 1.75 cups of water(i.e 1 :1.5 ratio)
Step 3: Prepare coriander paste. Grind ginger, garlic, chilies and coriander aand make a smooth paste. Don't add water.
Step 4: Add oil to a pan, saute all the whole spices. Add cashews and fry till golden. Add onions and then vegetables. saute for 5 mins. Add the coriander paste and saute for 2 more minutes. Add rice along with water , add turmeric, salt and bring everything to a boil. Close the lid and pressure cook for 2 whistles. Serve the hot and delicious coriander rice with a raita.
