PANEER BIRYANI
INGREDIENTS
FOR BIRYANI MASALA
Coriander seeds - 1 tbsp
Cumin - 1 tsp
Saunf - 1/2 tsp
Star Anise - 1
Cardamom - 4
Cloves - 4
Cinnamon - 1'' stick
Nutmeg powder - 1/8 tsp
Marati mogga/capers - 1
Black pepper - 1/2 tsp
Red chilies - 4
FOR PANEER MARINATION
Paneer - 250 gms
yogurt - 1/2 cup
Biryani masala - 2 tbsp
FOR MAKING BIRYANI
Ghee - 1 tbsp
Whole spices - Bay leaves,Cinnamon stick, star anise, cloves, Shahjeera, cardamom, mace
Onion - 1 large
Ginger garlic paste - 1 tbsp
Potato - 1 medium
Carrots - 1.5 cups
Cauliflower - 1 cup
Beans - 1 cup
Marinated paneer
Chopped coriander and mint leaves
Basmati Rice - 2 cups
Fried / caramelized Onion - 1/2 cup
Lemon Juice - 1 tbsp
DIRECTION
1. Prepare Biryani masala by dry roasting the whole spices for 2 minutes on a low flame. Grind them to a fine powder
2. Whisk yogurt and add prepared biryani masala. Marinate paneer pieces for 20 minutes.
3. Turn IP - saute mode, add ghee and whole spices.. To that add onion. When it turns translucent add Ginger garlic paste. To that add vegetables and saute till slightly tender(10 minutes).
4. Add mint leaves, coriander leaves, salt, Biryani masala and marinated paneer. Mix well
5. Spread Layer of fried onions and rice. Add 3 cups water and top it with chopped cilantro and mint leaves. Finally add in caramelized onion or fried onions. Add a tbsp of lemon juice.
IP SETTINGs - MANUAL MODE FOR 6 MINUTES - VENT SEALED
QUICK RELEASE THE PRESSURE after 6 minutes
